Grilled Chicken Breast
Grilled Chicken Breast with Charred Broccoli and Spiced Rice
serves 4

Ingredients
4 each Chicken Breast
½ jar Bottled Thyme Chicken Jus
To Taste Bottled Thyme Hickory Salt
½ cup White Rice, uncooked
½ tsp Chili powder, cumin
2 cup Water
1 med Carrot – small dice
2 cup Broccoli – small florets, blanched
To Taste Salt & Pepper – (rice, broccoli)
Enough oil to sauté the carrots
Process

Start to heat up your grill to med-high heat. As your grill is warmed up, heat up a medium sauce pan (make sure you have a lid) to med-high heat with oil. Sauté the carrots for 2-3 minutes. Add the chili powder, cumin, salt & pepper to the pan. Taste the spices for 1 minute, long enough for you to start smelling them.

Add the uncooked rice and toast for approximately 2 minutes before adding the water. Lightly mix and bring up to a light simmer. Reduce the heat to med-low and cover. Cook for 15 minutes covered the entire time. At end of the 15 minutes, turn heat off and allow to stand for another 5 minutes before stirring.

While the rice is cooking, pre-heat your oven to 400 degrees. Lay the broccoli evenly on a cookie sheet; season to your liking. Cook for 15-20 minutes, mixing at about the half way point.

Right before the grill is ready to cook on, start to heat the Chicken Jus on low heat to a simmer. Season the chicken breasts with the Hickory Salt. Place directly onto the hotter part of the grill and cook 3-4 minutes before flipping; cook for another 3-4 minutes. Note that cooking times are going to vary, depending on the thickness of your chicken. You will know it is finished when the chicken is firm to touch.
