Canton Beef & Pineapple

Canton Beef and Pineapple

serves 5 to 6 people

 

1 jar Bottled Thyme Romesco Sauce

 20 oz of pineapple chunks with juice

 2 green peppers- medium diced

 1 ½ lbs of chuck roast- cubed

 2 cups of white rice- cooked

 1 TBSP soy sauce

 1 TBSP corn starch

2 TBSP cold water

1 medium white onion- medium diced

1 clove garlic- minced

1 tsp chili powder, cumin & black pepper

To Taste - salt

Instructions

  1. Cut the green peppers, chuck roast, white onion, and garlic to size.  Combine all of the ingredients except green peppers, rice, corn starch and water in a 5 qt crock pot.

  2. Cook for 8 ½ hours on low or 4 ½ hours on high.  When there is about a half hour left, taste and adjust the seasoning accordingly. 

  3. Add the green peppers.  Combine the corn starch and water, whisk until smooth and no lumps.  Add to the crock pot and stir; this should thicken after a few more minutes of cooking.

  4. After checking the seasoning, prepare the white rice by following the instructions on the package.

  5. Using a stew bowl, place a spoonful of the white rice in the center.  Ladle desired amount of the beef and pineapple on top of the rice. Enjoy!
